Hi - I can't find where to tell the sliding menu that it should slide down when a submenu opens and not to clamshell open. Can you point me in the right direction? I want the top to stay put.

Dear John,
First of all, in order to have the submenus “slide down” you need to choose the appropriate effect in the “Appears – How” property:
Then regarding the top of the menu staying put, if you want this then you need to adjust your Positioning. Currently you have set the center of the menu to position to the page Element. Hence the menu will always try to keep it center there, hence both the top and bottom will move.
If you position the top side of the menu relative to your element then the top side will never move.
